Spinach and yogurt Rice

Ingrédients

  • 1 cup long-grain rice (250 ml)
  • ½ teaspoon salt (2 ml)
  • 2 cups boiling water (500 ml)
  • 10 oz. fresh or frozen spinach (300 g)
  • 6 eggs, lightly beaten
  • ½ cup milk (125 ml)
  • 1 cup cheddar cheese (250 ml)
  • 3 tablespoons melted butter (50 ml)
  • ½ teaspoon salt (2 ml)
  • Freshly ground pepper
  • Pinch of nutmeg

Preparation

  1. Mix rice, salt and boiling water in big saucepan. Cover and simmer for 20m minutes. Remove and let cool.
  2. Remove spinach shanks, rince and strain. Simmer on medium saucepan for 3 minutes. Rince with cold water immediately after and spin-dry. (Frozen spinach should be prepared accordingly to the directions on the package, strained and spin-dried).
  3. Put all ingredients in large bowl and mix well. Pour mixture in a 20 X 30 X 5 greased plate.
  4. Bake at 350 F (180 C) for 35 to 45 minutes until golden.
