Spinach and Liberté cottage cheese lasagna roundels

Ingrédients

  • 140 g fresh spinach, rinced, dried and chopped
  • 2 tablespoons parmesan (30 ml)
  • 1 cup Liberté cottage cheese (250 g)
  • Pinch of nutmeg
  • Salt and pepper, to taste
  • 2 ½ cup homemade tomato sauce or peperonata (red pepper sauce) (625 ml)
  • 8 spinach lasagnas

Preparation

  1. Puree Liberté cottage cheese in blender.
  2. Add parmesan, spinach and nutmeg. Season to taste.
  3. Spread each lasagna with 30 to 45 ml of mixture.
  4. Roll lasagne in slices and place in a pyrex plate.
  5. Cover roundels with tomato sauce.
  6. Bake at 350 F (180 C) for 20 to 30 minutes.
