Liberté Cream Cheese Cranberry Bean Salad with Caramelized Onion Purée

Ingrédients

  • 100 g (1) Liberté Light Cream Cheese
  • 400 g (2 cups) Cooked coco beans
  • 200 g (24) Cherry tomatoes, halved
  • 1 Diced red pepper (5 mm or ¼ inch)
  • 2 Large onions, thinly sliced
  • 4 Garlic cloves, minced
  • 1 Sprig of fresh thyme
  • 45 ml (3 tbsp) Olive oil
  • 60 ml (4 tbsp) Freshly chopped parsley
  • 60 ml (4 tbsp) Freshly chopped chives
  • 60 ml (4 tbsp) Freshly chopped cilantro
  • Salt and pepper to taste

Preparation

  1. In a saucepan, caramelize in olive oil the onions, garlic and thyme.
  2. Puree in a mixer and add the cream cheese.
  3. Store in the refrigerator.
  4. Drop the cooked beans, cherry tomatoes and cream cheese mixture in a large mixing bowl.
  5. Add the diced pepper and herbs.
  6. Adjust the seasoning (salt and pepper).
  7. Garnish with lettuce and serve.
 
Note
You can replace the coco beans with other varieties of white beans.
