Cauliflower and Liberté yogurt curry

Ingrédients

  • 2 tablespoons sunflower oil (30 ml)
  • 2 sliced onions
  • 1 clove of garlic, crushed
  • 1 tablespoon curry powder (15 ml)
  • 1 teaspoon turmeric powder (5 ml)
  • 1 cauliflower in small pieces
  • 4 sliced carrots
  • 1 tablespoon tomato extract (15 ml)
  • ¾ cup chicken broth(175 ml)
  • ¾ cup Liberté Plain Greek Yogurt 2% (175 ml)
  • 1 tablespoon fresh chopped parsley (15 ml)

Preparation

  1. In a saucepan, heat oil and brown onion and garlic for 5 minutes. Add curry and turmeric and cook for 2 more minutes. Add cauliflower, carrots, tomato extract and broth.
  2. Cover and simmer for 15 to 20 minutes.
  3. Right before serving, add yogurt and parsley, mix well.
